• Bonded bourbon produced by Starlight Distillery in Starlight, Indiana • Blend of mash bills including a 3-grain mash bill of 60% corn, 20% rye, 20% malted barley and a 4-grain mash bill of 51% corn, 20% rye, 20% malted barley, 9% wheat • Produced using estate-grown non-GMO corn, rye, and wheat; malted barley locally sourced • 7-day closed top, sweet mash fermentation in stainless steel • Twice distilled in a Vendome brass and copper pot still • Aged 4.5 years primarily in air-dried barrels from Canton Cooperage with toasted heads and char levels ranging from 1–4 • Red apple, cinnamon, toffee, and sourdough on the nose transition to charred marshmallow, orange peel, and arugula on the palate with allspice and sour cherry riding out the finish • 50% ABV In accordance with the Bottled in Bond Act of 1897, this bourbon is aged at least 4 years, is a product of a single season and a single distiller, has been aged entirely in a federally bonded rickhouse, and is bottled at 50% ABV.
