Brucato built Spring Almond as the seasonal counterpoint to a traditional Italian nocino — where nocino uses green walnuts harvested in early summer, this one captures green almonds picked from California's Central Valley before they mature, when they're still soft, nutty, and bright with vegetal character. It's the first release in Brucato's Experimental Series, a line the San Francisco distillery (founded by James and Sierra Clark) built specifically to explore California's agricultural bounty in ways a standard amaro can't. Those green almonds macerate in unaged grape brandy, distilled in Sebastopol, for up to five years in stainless steel tanks, before a touch of unrefined cane sugar rounds out the final blend. Expect a nose of white flower, marzipan, and citrus zest, opening into a palate of golden raisin, dried apricot, honeydew, mango, and panettone-like fruitcake spice. With only around 1,000 liters produced, this is a genuinely limited, small-batch release. Bottled at 36% ABV, it's built to be sipped neat, added to a spritz with a splash of soda, or layered into a Negroni riff or bitter almond sour.
