Crafted in Amatitán, Jalisco from fully mature 100% organic Blue Weber agave harvested at peak sugar levels, this unaged expression is a model of authenticity. The agave is gently cooked in a low-pressure autoclave over a 24-hour cycle to lock in natural flavors, then passed four times through a roller mill and blended with pure volcanic spring water from Navichi Springs. Fermented in stainless steel with proprietary yeast and double-distilled in stainless pots with copper coils, the tequila is then aerated and rested for one to three months in stainless vats for a fuller body and enhanced drinkability.
