Description: Our VS Cognac is distilled from wines from the Cognac region in a single distillery and aged in French oak barrels for at least 30 months. We use wines from three of the major crus in the Cognac region to create a robust, fruit-forward, and rich distillate. The maturation process takes place in our cellars, using 15% new barrels and 85% previously used Cognac barrels. We carefully select and toast our oak barrels (using large grain oak that has been dried for 36 months) at high temperatures to bring out the best flavors in our VS Cognac.

In terms of appearance, our VS Cognac has a nice amber color with copper glints and is limpid and shiny. On the nose, it is fruit-forward, with pear, raisins, and dry apricot notes, followed by a very distinct bourbon vanilla flavor and a delicate finish of toasted oak and light smoke. The palate is very round and soft, with a delicate mix of fresh grapes, wine notes, and flowers. The finish is a mix of typical French oak notes with an already oxidized prune note.
