Type 23 is our flagship in both Japan and the US. It symbolizes our desire to create the best sake by polishing Yamada Nishiki, known as the king of sake rice. The elegance, brilliance, and clean sweetness are the result of polishing up to 23%.
Rather than trying to replicate the flavor profile of our Japanese DASSAI, we decided that DASSAI BLUE should stand on its own—as the best sake made using all that its New York environment has to offer.
