This is the extreme end of Gikyo's philosophy: rice milled all the way to 30%, meaning 70% of every grain is polished away — a level most breweries would trumpet as their flagship Daiginjo. Yamachu Honke calls it Junmai Ginjo anyway, because 11th-generation brewmaster Masahiro Yamada considers "great ginjo" a boastful and unnecessary label. The rice is Grade A Yamada Nishiki from Tojo, widely regarded as the finest sake rice in the world and released to only about twelve breweries in Japan; the brewery mills it in-house on a seimaiki machine Yamada invested in specifically to control the process, and washes the grains by hand. Founded in 1813 where the Kiso River meets Ise Bay in Aichi, the house name means "chivalrous" — earned when the brewery refused to raise prices during a 19th-century rice shortage. At this polish, the sake turns exceptionally refined: delicate floral and fruit aromatics, melon and white peach, a silky, precise texture, and a clean, elegant finish where Gikyo's signature toasted-grain savoriness sits quietly underneath rather than out front.
