Los Javis Tepeztate Joven Mezcal is a premium Mezcal crafted from the rare Maguey Tepeztate in Santiago Matatlan, Oaxaca. This unique agave species, which can take up to 25 years to mature, is a testament to the dedication of mezcal producers in this region. The production process begins with the slow roasting of the agave hearts in underground ovens, allowing the natural sugars to caramelize, producing a complex flavor profile. Following this, the agave is crushed using a traditional horse-drawn Tahona and fermented with natural yeasts, which add depth to its character.
