Their approach is consistent with every spirit they make. We found every ginger from different regions and tested them all. Each region gave different characteristics. After many experiments, we realized that bringing out the heat was the easy part. The true refinement was to pull the sweetness from the ginger, and we hand selected the ginger that provided that flavor. We check for the quality of every ginger root, and hand peel every last one.
