Mizu Sakura Cask is the brand's first barrel-finished shochu, single-distilled from Saga barley and black koji rice, then aged in native yamazakura cherry-wood casks at 70 proof.
Mizu Shochu is made in Kyushu, Japan, by master distillers Hirofumi Okoba and Shinji Wada, who bottle at a traditional 70 proof — more concentrated than the diluted 50-proof style of most modern shochu. This Sakura Cask expression is single-distilled from locally farmed Saga barley and black koji rice, then finished for at least nine months in medium-char yamazakura (wild mountain cherry) casks from the renowned Ariake Sangyo cooperage. The result is a pale-golden shochu inspired by Japan's cherry-blossom tradition.
Deep and fragrant: bright floral spring-blossom aromas open into vanilla and banana, with a velvety mouthfeel of baked cherries, burnt sugar, a touch of smoke, and a gingersnap finish.
