The Arpège is his entry-point Blanc de Blancs — 100% Chardonnay from parcels not selected for his limited-production Coeur de Terroir bottlings — yet it is anything but secondary. The chalk and flinty silex soils of Mont Aimé give the wine its distinctive mineral structure and smoky depth, while a substantial proportion of reserve wine held in enamel tanks adds complexity and consistency. The bouquet opens with ripe pear, crisp apple, and citrus, followed by spice, black tea, white flowers, and lightly toasted brioche.
