Rebecca Creek Distillers ages their bourbon for up to 4 years in new Spanish Oak barrels, aiming to produce a bourbon whose taste and colour resembles whiskey twice its age.
The whiskey was then aged for a further 2 years in second-fill American Oak barrels to complete the unique, dual-aged maturation process.
Mashbill: 75% Corn, 21% Rye, 4% Malted Barley.
Nose: Vanilla, graham cracker, and light alcohol heat.
Palate: Soft wood tannins, caramel, and vanilla.
Finish: Sweet oak flavour, chocolate, smoke, and cherry.
