Served chilled, this classic Junmai sake offers a very fine texture with harmonious aromas and flavors of macadamia nuts, Chai spices (cardamom, nutmeg), vanilla, heavy cream and freshly sliced bread.

Served at room temperature, mineral, creme fraiche, sourdough, custard, umami and apple notes emerge.

When reheated to around 100°F, the texture and flavor develop, bringing out a more intense umami while retaining the texture's smoothness. Salty elements of salted custard, cocoa nibs, banana bread, toasted nuts and minerals are evident

Taste: medium-bodied, dry. Sweet, refreshing and elegant with floral, earthy and cereal notes. A long finish with a touch of sweetness. Delicious with raw or fried fish and lightly seasoned Asian dishes.

Serve: hot or slightly chilled or at room temperature

Suggested pairings: Only the nuanced aromas and flavors of Classic Junmai are easily discernible and appreciated. It goes well with lightly seasoned foods, including egg dishes, noodles, rice, sushi, and shrimp tempura. It also complements medium-flavoured firm white cheeses, such as Gruyère, Manche-go and cheddar, and very creamy young cheeses.
