Bijofu means "a handsome man," and it's the brand of Hamakawa Shoten, brewing in Kochi Prefecture since 1904 — and the "Tama" on the cat label is the classic Japanese cat name, roughly the local equivalent of "Whiskers." What defines the sake is the water: ultra-soft water drawn from the subterranean Nahari River, so gentle it forces a long, slow, low-temperature fermentation that builds delicacy layer by layer. Brewed from Matsuyama Mii rice grown in neighboring Ehime, milled to 55%, landing at SMV +3 with 1.5 acidity and 15% ABV. The first sip is almost watery — then it blooms: a smooth, citrusy expansion with a sharp, refreshing edge. Sake blogger and IWC judge Alex of Sugidama found it elegant and clean with surprising complexity — banana, pear, and honey melon with orange zest on the nose, honeydew and grapefruit on a gently sweet, oily-textured palate with balanced acidity. Skurnik's importer notes add a distinctive chalky texture with muscat grape and tart underripe melon, ending in a dry, lip-smacking finish. Kochi is Japan's great seafood-sake prefecture, and this drinks that way — brilliant with fatty fish, sashimi, and even Japanese BBQ. Serve chilled.
